Ramen Hillsboro

Welcome to Magokoro Ramen – an authentic ramen food cart located in Hillsboro, Oregon.

About Magokoro Ramen

Founded in 2018 in Beaverton, Oregon, by a descendent of a samurai family in Japan each and every bowl of ramen served was made with real bone broth with real nutrients and house-made sauces unlike what is common out here in Oregon.

The Japanese word magokoro roughly translates into sincerity or devotion in English. In the context of serving ramen in the United States, it means authenticity that is our backbones.

Why Us?

Authentic

We firmly believe that anyone with the desire to have a real hearty bowl of ramen shouldn’t be fed a ramen with fake broth that is just watered-down factory-made soup bases that typically consist of meat extracts, artificial flavors and colors, starch, and the combinations of chemical flavor enhancers you cannot buy in stores. That is okay sometimes but that is only so long as you know what it is and that it can rob your ability to taste food properly in a long run. As an avid ramen fan, when you taste a hint of those factory-made soup bases in your bowl of ramen you should instantly regret ordering it.

Mastery of Tradition

Our shoyu ramen is more than just a meal; it is a window into the rich history and meticulous craft of Japanese ramen. We believe shoyu ramen is the cornerstone of all ramen varieties, embodying the essence of what makes ramen truly special. With every bowl, we showcase our deep understanding and respect for this beloved dish. You can taste the dedication in the careful preparation of the broth and the harmony of ingredients, reflecting our commitment to preserving and perfecting the traditional art of ramen-making.

Passion & Craftsmanship

We believe ramen transcends mere flavor enhancements or artificial stimulants; it’s about the balance, aroma, history, and sheer hard work invested in each bowl. Our approach focuses on the genuine elements that contribute to an authentic ramen experience. From the science and logic behind ingredient selection to the passion and effort poured into the cooking process, our ramen represents a culmination of everything that makes this dish remarkable.

We are regulars at this wonderful ramen cart. They recently moved to Hillsboro Downtown Station food carts, so be sure you are going to the right place (the address is 320 SE Baseline St., Hillsboro, OR). We always get the shoyu ramen, and it is always delicious!

The first time I ate here, I was pleasantly surprised by the superior quality of the ramen I ordered, particularly the noodles themselves, which are what I most commonly find lacking at other establishments. Just to make sure my experience wasn't a fluke, I recently went back and ordered just a bowl of noodles in the wasabi shoyu broth, nothing else. Sure enough, it was delicious and perfect. I should note that I've never been to Japan, so my points of reference are the handful of times I've eaten delicious ramen at upscale establishments specializing in it and the times I've eaten it at more questionable locations, where it seemed more like instant top ramen with fancy toppings added. That being said, I'd highly recommend Magokoro Ramen to anyone looking for an authentic ramen fix without the hassle of trying to get a table at a fancy restaurant.

Really enjoyed the mazesoba here. It's a special dish you don't find in a lotta ramen places in and around Portland. Good portion size for lunch, under $20 (including tip) and prepared well. The brothless noodles were still steaming hot, full of light yet refreshing umami flavor, and chewy yet soft. The chicken and pork were tender, and the egg was not too hard. You have a lot of options in this huge food pod, but Magokoro is a standout!

I recommend the mazesoba! Great texture on the noodles and I do like the other ingredients as well. Bamboo shoot not too dry or tough. Chashu at a good level of tenderness and flavor. I would recommend this to others!
