Welcome to Magokoro Ramen – an authentic ramen food cart located in Hillsboro, Oregon.
Founded in 2018 in Beaverton, Oregon, by a descendent of a samurai family in Japan each and every bowl of ramen served was made with real bone broth with real nutrients and house-made sauces unlike what is common out here in Oregon.
The Japanese word magokoro roughly translates into sincerity or devotion in English. In the context of serving ramen in the United States, it means authenticity that is our backbones.
We firmly believe that anyone with the desire to have a real hearty bowl of ramen shouldn’t be fed a ramen with fake broth that is just watered-down factory-made soup bases that typically consist of meat extracts, artificial flavors and colors, starch, and the combinations of chemical flavor enhancers you cannot buy in stores. That is okay sometimes but that is only so long as you know what it is and that it can rob your ability to taste food properly in a long run. As an avid ramen fan, when you taste a hint of those factory-made soup bases in your bowl of ramen you should instantly regret ordering it.

We always get the shoyu ramen, and it is always delicious!Travis Holland2024-05-22The first time I ate here, I was pleasantly surprised by the superior quality of the ramen I ordered, particularly the noodles themselves, which are what I most commonly find lacking at other establishments. Just to make sure my experience wasn't a fluke, I recently went back and ordered just a bowl of noodles in the wasabi shoyu broth, nothing else. Sure enough, it was delicious and perfect. I should note that I've never been to Japan, so my points of reference are the handful of times I've eaten delicious ramen at upscale establishments specializing in it and the times I've eaten it at more questionable locations, where it seemed more like instant top ramen with fancy toppings added. Good portion size for lunch, under $20 (including tip) and prepared well. The brothless noodles were still steaming hot, full of light yet refreshing umami flavor, and chewy yet soft.
